We have been using SecureW2 here at the University of Utah for some time
now.  Before that, we used the Meetinghouse Aegis supplicant.

Mac OS X is easy since it includes a supplicant that is pretty good.
(It lacks a couple features that would be nice to have.)

For Linux, you have two choices.  Xsupplicant (which I am partial
to.. ;)  and wpa_supplicant.  Both have their pros and cons, and which
one you use seems to quickly becoming an issue similar to using KDE or
GNOME.  (Both work fine, but one may be a little better in some
situations than other.)  I have seen some Universities that provide
configuration examples for both.  

One thing I would suggest is that unless you have a large support staff,
you should probably limit your supported OSes to Windows and Mac.  We
provide documentation to help users that want to use Linux, but if they
come to our walk-in desk, they are usually told that we can't help them.
The reason for this is that every different wireless card under Linux
has some strange quirks.  (Not to mention every different Linux flavor
introduces it's own additional quirks.)

For BSDish systems, I believe the only choice is wpa_supplicant.
(Though Xsupplicant will be running on BSD and Windows by Feb., along
with some other interesting, yet to be announced features.)
