Placing users into different vlans will not improve performance in the air from an 802.11 perspective. You'll still have additional management frames from the added ESSIDs. But don't worry too much about it, as just about every enterprise nowadays supports multiple BSSIDs per radio. You'll experience more congestion from devices using your new services versus the beaconing.
