In my case, the AP has two 200mW radios transmitting at full power on channels 1 and 11, and the client (running Ethereal) is about 100 feet away inside a sailboat ;-)

The client has the latest patched orinoco_cs driver, and is a orinoco silver card with a 15db directional panel antenna (mounted on the mast) aimed at the AP. I've set the interface to monitor channel 11 (iwpriv eth1 monitor 2 11).

After more Ethereal snooping, I notice I'm seeing beacon frames from both radios on a few channels (1,2,11 about equal beacons from both radios, and a very small number of beacons on a few other channels).

Maybe this beacons/channel thing is not important. Does anyone know what affect this has in terms of network utilization? Clearly it would be better to have less broadcast traffic, but if some vendors are broadcasting beacons deliberately over multiple channels, maybe it doesn't matter that much?

Nope... Perhaps you have setup your AP to 'Search for best channel' and it is moving itself around the the lower utilization channel on a regular basis?
