Where are you changing the header? The easiest way to do this is change the character set encoding with a meta tag at the beginning of any results html page. If you grab an HTML page template from the snippets, you'll see the tag there, and you can just replace the character set with the one you want to use. That should work just fine. (Famous last words...)
