I woulld give a clean basic installation with 1 Gib of ram a chance. If it does not crash during that time, subtitue apache with webstar and wait another time. Do you just install the webserver or mail also?
After that i would install witango server and wait and test further on.

I have 512MB in it. I originally had a Gig in it, but the Apple Tech here suggested I take out the RAM that didn't come in the factory configuration for testing... and I have since tried each 512MB chip separately.
The reason I doubt it's WebStar is that when I started installing the Apps back after a reformat and clean OS X install (as our Apple Tech suggested) with the plan to install each app one at a time and then wait to see when it started crashing... well, the very first non-OS software I put on was Dev Studio. It also Kernel panics within 3 days every single time if I leave it running.
Any other ideas or suggestions very much appreciated! (this is becoming a bit of a pain)

€ RAM - you really need lots of it - how much do you have
€ Webstar - this can also be a reason for failure - want to try apache?
