you might want to use the google (xml) sitemap 3.0b6 beta:

it fixes the memory issue and even though it's a beta version, i've been
running it without issues on wp 2.0.7 and also wp 2.1 so i'm sure you'll be
fine.
it also tells you how much memory is being used as well.
just a thought.

Google Sitemaps plugin is a known memory hog. That would be the
first one I'd deactivate.
