Talking specifically about 80m ...

It's usually possibly to find a slot, although 2000-2500 is often
spoiled by audio harmonics from stations lower down. Overall the band is
pretty crowded from 200 to about 2800 Hz. (On 80m, JT65 doesn't start
until FT8+3200 so there's still room at the top end, for those who
aren't constrained to a single SSB channel.)

The problem on 80m is more that with, say, 80-90% of the bandwidth in
use by strong EU stations, and with no skip zone most of the time, the
chance of hearing any DX is reduced to about 10-20%. Even that will
often go when a deaf EU operator calls CQ over the top of it.
