Yes.  2.6.6 and up should do esxi5 just fine, like esxi4.1.  copycds 5.0
media, go.

2.7 will add native UEFI PXE boot of esxi5 (an xCAT exclusive according to
VMware).

is there an easy way to deploy ESXi5 with xCAT (maybe some preliminary
patches).
ESXi 4.1 works fine with xCAT but I'd like to do deploy ESXi5 without
Update Manager.
