I believe there is the compass c-probe that should provide a host of
sensors including airspeed. Its supported by xcsoar.  

I had a quick look at the probes you are talking about:

They seem to plug into existing PG/HG sensor platforms such as the
braueniger/Aircotec/etc... While the plug may fit into a phone, i'm very
unsure of how they work electrically. Please don't assume just because
the plug fits that it should work with any phone. Seeing that each of
these sensors only work with specific devices, i think its safe to
assume that there is no standard.  
 
In addition I don't think android allows that low level access to the 
phonejack.    

There might be a possiblity to reverse-engineer these things and hook
them to an IO/IO Board.   

But then again all this is work. And xcsoar is chronically short on
manpower. Please feel free to join the development effort and start
experimenting. :)
