That did the trick! Using your suggested
\setCJKfamilyfont{ume}{Ume Mincho}
\newcommand{\jp}[1]{{\CJKfamily{ume}#1}}
in the prologue,
then using
\jp{日本語... 等等}
to apply Ume Mincho to a Japanese string works like a charm.
I must study the \newcommand command.
(I'm using Linux Mint Debian Edition.)

fonts name. Further, I don't have every fonts you use so I tested with
