<< I have figured out how to do the stitch but what I can't figure out is how

There are several ways to do this. I'm assuming from the "twisted ladder
stitch" that you are working on a Shepherd's Bush chart! The 1st method was
suggested by someone else on the list. Cut your horizontal threads in the
center and weave them back into the sides of the ground cloth. The 2nd method
is to cut the 8 horizontal threads in the center. Starting at the top of the
8, leave the 1st thread as is. Completely remove the 2nd thread. Yes, remove
it totally from your fabric! Then go back to the 1st thread you cut, unweave
it to the edges of your pattern and then weave it into the row that you just
removed. This 2nd method eliminates the bulkiness of extra threads woven into
the sides.
To secure the floss you are using for stitching, I usually bring my needle
about 1/2 inch away from the side of my pattern (or whatever amount of "space"
you want to show beneath your mats) and then weave the floss into the ground
fabric. This way, the floss that is woven is secure and any of it showing
from the front will be covered by a mat. If your floss is the same color as
your ground fabric, you could just start weaving right at the sides of your
pattern and it won't be very noticeable.
