Whisker settings are saved in the file ~/.config/xfce4/panel/whiskermenu-*.rc
The panel colors are saved in the file ~/.config/xfce4/xfconf/xfce-perchannel-xml/xfce4-panel.xml Surely changing the Theme would help to get more readable colors? Settings | Appearance | Style
