In the Finder, press command-f to create a new Spotlight search window. You can search for a note and once you find it, take not of the "kind" for Entourage notes. For Entoruage 2008 it is vrge08_note. You can repeat the operation, but this time don't enter anything for the content you search for. Instead, click on the plus sugn allowing you to add search criteria and select Kind Other and enter the kind for Entourage notes (again, for Entourage 2008 it would be vrge08_note. I can't confirm for 2004 since I no longer have it).

This search should return all the notes you have in Entourage. You can save this search on the desktop. Double-clicking the saved search allows you to specifically search on notes, and you can further restric the searches by entering a content to search for.
