That is exactly the problem, Corentin!  There is an IP mismatch.  Outlook on a 
PC doesn't give a hoot about it.  Entourage on the Mac won't let me get in.  So 
I am hoping the new beta, being more "Outlook-like," and using Exchange Web 
Services, might not be so picky.  A long shot, perhaps, but I will try anything 
now.

(I've not been able to get a copy of the cert to install on my Mac from my IT 
dept.)

I don't see why it would. What's your problem with root certs??  
Usually, you only have troubles with certificates when you haven't  
imported the proper root cert or if the cert has some sort of mismatch  
(eg: name/IP, etc)
