One question though: are there any restrictions to the categories and the 
ability to refactor them? I seem to recall accidently deleting 'junk' sometime 
back with some adverse affects.

I use an * in front of the name to bring them to the top of the list for
easy selection.

I also use a method of using a category/tag. This helps group by the
category for easy organization. If you had a lot of groups, you might not
remember the name when you start to address a message, but since they will
all start with group, then it's easy to find it in the list.

Support: newsgroup 
Support: consultant
Support: consultant: paid

Group: Christmas cards
Group: soccer
Group: work: project 101

You can use the category list to assign a color to a folder. It doesn't not
do anything to the folder other than make it a color. Useful to identify a
folder in a long list of subfolders.

You can also use a script to assign a category so you can prioritize your
messages.

To me, categories are the key to making Entourage work.
