If you add it back at a later time, you'll have to re-assign the category to items. Tip: In the Edit Categories window, if you click on a category, you can select the icon at the top right "Related". This will show you all items that are assigned to that category. If you want to delete that category and assign to another category, select those items in the edit related window and assign the new category. After you delete the category, the items will automatically remove that category. If you rename a category, it automatically updates/refreshes the name assigned in those items. No need to reassign just to change the name. If you change a color, the color is also refreshed in the old items. You might need to select all in that folder and run "all rules." After this discussion, I was doing a little housekeeping on my categories. I find they tend to grow like bunnies if I'm not careful. I found this little trick that helps me look at certain categories "grouped". I used the (option 8) in front of several categories and that helps me easily find them in my long list. In essence, the symbol is like a category. Buddy Friends Family Newsletters I put the $ sign in front of categories that in my Financial categories. Using the *, and $ sign all push them to the top of the list. Another way to view categories more easily. You can use these same techniques to help order your folders and subfolders.
