They are basically my workflow prompts for text input. It the gets the variable and the passes the result to Apple mail by dragging the variable to to the subject in Apple mail it fills in the subject. If you drag the variable to the subject line in the Entourage action "Create New Entourage Mail Message" it will not work. The workflow is very similar to this U-Tube video: http://www.youtube.com/watch?v=lKPdv3lpjW4&feature=related except using Entourage instead of Apple mail. I have the part that attaches the selected file working fine. I cannot figure out how to get my Automator variable called "subject" into the Entourage message subject window.
