sorry to say that it doesn't seem to be possible to assign a variable
to the text boxes in the 'create entourage message' automator action.
It is possible to do this all with appleScript, and an automator
action can be used to run the script, if you want the action in the
contextual menu.
If I get the chance, I'll write you such a script later today and send
it on.

Can you explain what you are trying to do in plain talk? I'm not
understanding what you are trying to do. In Automator, a
combination of
actions and scripts might get what you want accomplished.
