You can create custom device classes with the field at the bottom of
the sub-devices table. (Which should really be called Sub Device
Classes.) Enter the name of the new class in the field to the left
of the Add button, then hit Add.
It is common for users add device classes to group hardware by
manufacturer, os, etc. The ones that come pre-built are not meant to
be exhaustive, they're just some of the most common groupings to get
you started.
