Introducing a single point of failure - the problem I'm avoiding by using a
load-balanced setup now (except, of course, when the load balancer fails,
which is what happened).

Let me restate the question then:

If SMTP relaying to localhost fails, how do I set a secondary SMTP relay to
ensure my alerts go through?
