Introducing a single point of failure - the problem I'm avoiding by using a
load-balanced setup now (except, of course, when the load balancer fails,
which is what happened).

Let me restate the question then:

If SMTP relaying to localhost fails, how do I set a secondary SMTP relay to
ensure my alerts go through?

Zenoss is only capable of sending to one SMTP server. If you're so
concerned about these alerts getting sent out that your local SMTP
daemon can't even be a single point of failure you should investigate
hooking up a modem and setting up SNPP.

If you're concerned about your localhost SMTP daemon being a point of
failure because it is handling more than just local mail, you could
potentially setup a simple task-specific SMTP daemon on another port
and have Zenoss use that.
