replying to myself, but... I discovered that the reason I wasn't seeing many services was because of the interface redesign - that you need to untick "Monitored" in order to see the services which aren't currently monitored.
This doesn't solve the problem that when something is moved to a different class (and thus should inherit a different modelling template), it doesn't seem to immediately do so.
