Hello, The guide that guyverix linked to was the most stepwise one available. Were there any particular issues you were having? It covers pretty much everything you should need to do.
As to getting packages installed, if you don't have internet access (not sure exactly why you are putting Zenoss on a box without internet, but), I think the easiest way would be to find the exact packages you need, then download their RPMs on another box. Copy those over, install with rpm, and you should be good.
