Windows Services are pretty simple. Just put the machine in /Server/Windows and make sure you've set zWinUser and zWinPasswd properly for an admin account on the target machine. Wait 20 minutes and they ought to show up.

As to Nortel switches, I haven't monitored any. However, I've been able to easily get some limited information from HP switches just by putting them in the /Network/Switch catagory. The forums do give a lot of info about building command based monitors or doing graphing from OIDs. MIBs really only help with traps received. Also, using command data sources let you use Nagios plugins which might also do some of the lifting for you.
