Depends on what you mean by polling but there are two values to worry about.
SNMP Performance polling which default is every 5min or 300 seconds. Includes most data like interface ips, routes, hardware etc. and Status monitoring which I believe is every minute. This includes Ping checks. >From the main Zenoss Page go to Monitors Click on the monitor you wish to change and change the interval value. If you dont want to change the GLOBAL setting then create new monitors and assign those devices to the new monitor. Changing SNMP Poling means you will need to remove the rrd files so they can be rebuilt with the correct timestep. Other guides here for that.
