You can't currently apply monitoring for a port to an entire class.
You can only set the default monitored state under Classes->Services
and then override that on a per-device basis.
The reason you might not see sshd on some Linux servers is due to how
SNMP reports IPv6 TCP listeners. Take a look at the following FAQ. It
mentions httpd specifically, but this applies to OpenSSH as well.
