I am not aware of any direct documentation in this regard, however in my experience, zenoss just work out of the box for Solaris machines. All I did was to install/enable/configure Net-SNMP on the Solaris servers and add the server to my zenoss. The OS Processes which you may be interested in monitoring should first be added to the /Process class and then to the individual servers. That's all.
For a quick pilot project you can download the zenoss appliance and run it in a vmware player.
