I believe you can use the event mapping and event transform functionality to do this, via TALES expressions in the transform ...

The Zenoss Book goes over this somewhat (and is a great reference I think) as does the admin guide section on event management. I'd look at examples for changing the event summary . . . Don't forget to have MIBS installed/registered if needed to transform OIDs to useful stuff.
