If these are IP based systems (and most of them are these days) or have the ability to relay information through IP based systems, then you will have the ability to monitor them. What statistics you can get from your "devices" (PBX, POS, et. al), will be limited by their data output API. This API can range from SNMP (get, traps), to making a TCP connection and parsing the output or performing synthetic transactions.
With Zenoss, you can do whatever you want, as long as you understand the system(s), underlying protocols and how they all interact. You're going to need someone who is very technical.
