What I would recommend is just install CentOS with the server box checked. No need for a gui. Then download the stack installer. Run the stack installer and you're done.
The stack installer also installs a new MySQL server that listens on 3307. The MySQL password that the stack installer is asking you for is a new password so can be anything you want. Don't forget to write it down.
