Nick,
        I built a new cold storage in 2010.  What I read in prep suggested
4" urethane walls--I went with 6" and am happy from an energy point of view.
I also saw some info saying floor insulation was not needed.  I don't agree
with that.  

If you are in area with no other apple cold storages, your refrigeration
vendors/engineers may not appreciate how important it is to have properly
sized evaporators.  Undersized ones run and run and take a lot of moisture
out of the apples.  Err on the side of oversizing. 

 Also, I learned in the past that apples start to lose
attractiveness(condition) for retail sales by December, even from growers
who I thought had it all together as far as harvest timing and
refrigeration.  They (and I) are now opening some ca in December, resulting
in better apples to sell.  This comment may be related to the steamy
September weather we sometimes get in the east.  Anyhow, my new storage has
a ca room that I open once a month to remove apples for retail sales.  I
close the room again and turn on the N machine.

Ernest & David,

Thank you for those responses.  Some very good points you mentioned  
that warrant further consideration.  I do like the multiple room  
approach for delayed cooling of Honeycrisp.  I want to target most  
sales towards retail with a small wholesale operation.  There will be  
no alternate storage nearby in this area so that's why I was leaning  
towards bigger rather than smaller.  No Smartfresh or CA storage to  
be used here.  As far as estimated sales per month I really don't  
have an idea what I could do.  Looks like I have some figuring out to  
do!
