In theory yes. Depending on if you wish to use your own PRIs or remote termination for asterisk as well as the phones you choose it could be done quite economicly versus the other options. Although due to the nature of asterisk you have alot of decisions as to how to go about it. Since you haven't worked with it before I'd suggest you have a consultant quote the install to meet your specs versus you taking the time to learn the ins and outs yourself.
