She's not the only server. There was one other person serving the rest
of the restaurant.

Given how slow that place normally is most Monday nights -- the free pie
promo is not for our benefit -- they probably were only working with one
server, one cook, and a manager until we came along. I think they have
now two servers, two cooks, and a manager, so it's not just the extra
server. (This, BTW, is one reason they get a little annoyed when we
have a near-cancellation on some convention weekends and why it's a good
idea for us to tell the manager when we expect the following week's
meeting to be lightly attended.)

It is their business, after all.

I'm not sufficiently annoyed to advocate it, unless we wanted to move to
the Round Table Pizza Newark (one of the sites I advocated the last time
we went a-wandering), and that is admittedly because it's much closer to
where I live; however, the location has other advantages that I would
further discuss if relocating becomes an issue.

I think we should live with the service charges for now and see if they
really want us to go away. I'm really surprised at restaurants thinking
we are more trouble than the money we bring them, actually. I don't
think we are _that_ much trouble, are we?
