The information that you are trying to change is in the header generated by the outgoing SMTP server. You'll never be able to fix it by changing the settings in the CF server. It sounds like what really needs to happen is that your network admin needs to set up an elmo subdomain and if necessary, change the settings in the SMTP server to reflect that subdomain.

CFMAIL sends emails with the header "Received: from elmo (elmo [192.168.10.22])" My issue is that some ISP reject emails if the machine name is not a FQDN (elmo.mydomain.com).
