You should have more log messages from Courier itself. You've only posted log messages from authdaemond and the esmtp server. Courier itself generates log messages when delivering mail.
I suspect that you did not actually start the main mail server daemon, just the esmtp server. So far, your esmtp server is merely collecting messages and puts them into the spool directory. No actual mail delivery takes place because the mail server itself is not up.
