Check if the Iphone IMAP client allows you to manually specify which folder it uses to save sent messages, and manually change it to "INBOX.Sent Messages".
Have the user, if that's you or someone else, contact Apple support and complain that after the latest update their IMAP client is fubar. Do not babble anything about IMAP namespaces, or protocol traces, just complain that the client is broken, while Thunderbird on your PC desktop works just fine, with the IMAP account, and see how that goes.
