You certainly want to use
http://packages.debian.org/lenny-backports/openoffice.org

With the instructions:

With your APT pinning configuration, only openoffice.org packages with
3.0.* version can be installed, what about openoffice.org depencies that
be fulfil only from unstable ?

So apt behaviour actually match the apt pinning configuration, closing
the bug.
