No, I didn't find the whole kernel source code under "linux-signed-amd64". I don't know for what that files are useful for, however what I did was to search "linux-source-6.1" in the binary packages section of the [1] Debian snapshot homepage, the resulting page lists all 6.1 kernel sources packages.
