Just my two cents, I use Gentoo for everything. When dealing with ARM64 boards I start with a fully custom kernel and U-Boot image, and do the root filesystem myself. I steer away from Debian due to poor performance. Gentoo isn't as user-friendly so that's the trade off.
At least for AMD64 platforms, I have an installer now that works. Rene, what was your -export-symbols-regex line? You said it doesn't work for all modules yet, I think I can get it going and finish it up.
