That's a rather extreme position, IMHO.
By restricting speakers to give talks based on whether they like to
appear on YouTube or not, doesn't sound like a particularly friendly
attitude. Especially, since you are giving in on a minority - those
who insist on having AV recordings.
Speakers who already have problems speaking in front of a crowd
would definitely be scared away by the perspective to have their
presentation appear on the net.
And, to reuse you argument, the community (at the conference) would
lose a lot more because of this - at least in some cases.
I say this as someone who signed the opt-out form for my lightning talk.

With that said, you should not just toss out an Idea or opinion just
because it came from PyCon US.
Oh, that's a wrong impression. I just don't regard PyCon US as mother
of all Python conferences :-)
I really don't think that doing AV recording of the conference
should receive so much focus and volunteer time.
There are by far more important things to do, where such
volunteer time would be better spent.

We were not going to do the AV recording, but we had volunteers who
wanted to make it happen. The other option was not having those
volunteers help out (they were not interested in any of the other
work). The end result is they ended up helping out with other things
as well and we are better off for having them.
Point taken.
(I know how much work it is to do those talk videos - having spent
many many hours on the eGenix videos last year.)
