Mark the layers as non advertised (it's a new flag in the publishing tab). This will be a new feature in 2.1.3, but you can get a GeoServer with it by downloading a nightly build: http://gridlock.opengeo.org/geoserver/2.1.x/ > How can I change the title and the abstract for a layer group?
