It is possible to have widgets on multiple pages referring to the same
signature field. This is not explicitly supported by iText but possible by
using its low level API.

Last time I checked Adobe Reader and Acrobat (some ninish version) did not
complain about such constructs. Maybe they will, though, in future as
signatures legally may be required to be located at a single position
(depending on the legal system a signature signs everything "above" it,
which requires a single position).
