As far as I know, Adobe Reader/Acrobat do not support custom validity
symbols anymore.

Beginning with version 6, Adobe Reader and Acrobat have not maintained
support for manipulated signature appearances using the layers n1, n3, and
n4 anymore.

As I do not have that code, this is a difficult question. Additionally I do
not really know those iText classes (ColumnText etc) well.

When creating the appearance layer, start by drawing a yellow rectangle
covering the whole layer.
