John, In U.S. census the basic vehicle is the population schedule (usually what people mean when they just use the word "census.") For many of the census years, however, there are additional census schedules: slave schedule (census of slaves, listed by owner's name), farm schedule, manufacturing schedule, etc.
These are an often overlooked resource - I have under-used them myself.
