Did you already try the document style article (AMS)? AMS has lots of new
environments,also Example! AMS style is explained in the "Profi-Tips"
Help-Document.

(However, it puts a bold Example 0.1 in front,
i.e. without colon and with "chapter_number.counter")

Furthermore, I did not manage to get out of Example, once I set my paragraph
to this environment! -> Well, I found out: Within an example you may have
several paragraphs (that is why <Enter> lets you stay in "Example"-mode) but
only the first has the (bold, numbered) Example #.# in front. To start a new
Example, one has to put some non-Example stuff inbetween. (I. e. if you
would like to have two different examples just one after the other you have
to put {} (in ERT) as a Standard paragraph between them.) (Maybe the
Profi-Tips user guide could tell so one day)

Hope this helps
(otherwise, you could possibly take the AMS style as basis for a
self-defined example)
