please understand that height and collision map are rather generic terms
that apply to a whole range of techniques not a specific one, so a lot
of details depend on the implementation. In the case of collision map
I'm not even sure what exactly is meant by it.

in general a height map is a grey scale image (.ppm = Portable Pixelmap
Image) where the amount of white determines the height of a pixel. That
means you can edit them with an image manipulation tool (e.g. GIMP or
Photoshop).

I don't know either (sorry, I'm not very familiar with inVR or that
specific demo), but I'd suggest you first try to figure out which image
files are actually used to build the terrain in the demo.

I suggest you ask on the inVR mailing list what (image?) format the
collision map is in and (more importantly) what kind of information is
stored in it, that should allow you to edit it according to your needs.
