Yeah some software podcasts might be irelevent. But the how to ones should still work. So any basic starting out with VO ones should be good. But then still you would want new ones after that to learn what's new. But it is true VO gives you a chance to learn it right out of the gate. Oh and check this, on the Mac you can install the OS all by yourself. Yeah there tricks to kinda sorta do it on Windows but not like on the Mac.
