This is true and important. But equally important is that a substantial
part of that grain should never be raised. The Great Plains should be
grass only, with limited grazing stock so that the grass needed no
irrigation, etc. etc. etc. A good deal of the world's protein potential
lies in plants that the human stomach cannot process, and much of the
world's grain is ecologically destrucive. Less destrucive, perhaps, than
large cattle herds, but still destructive.
