Carrot Cake Supreme 2 cups sugar 1 1/2 cup oil 4 large eggs 1 tsp vanilla 2 1/2 cups flour 1 cup crushed pineapple, juice and all 2 tsp soda 3 tsp baking powder 1/2 tsp salt 3 cups carrots, finely grated 1 cup nuts, chopped 2 tsp cinnamon Beat sugar, _oil_ (http://dummy.com/?q=5716&check=4dd0189a6ceced262cfce476fda3cec5) , eggs, and vanilla u ntil well blended. Add flour, cinnamon, soda, baking powder, and salt. Fold in by hand the carrots, nuts and pineapple. Pour into 10x14 inch pan. Bake 350F for 1 hour. Cool in pan on rack for 10 minutes. Turn out and complete cooling on rack. Frost when thoroughly cooled.
