ENDIVE AND BELL PEPPER SALAD AND NEW ENGLAND RANCH DRESSING
   4 medium Belgian endive
   2 medium red bell peppers
New England "ranch" dressing:
   1/3 cup buttermilk
   2 tablespoons low-fat plain yogurt, plus
   1 teaspoon low-fat plain yogurt
   Fresh lemon juice
   2 teaspoons chopped fresh dill, or thyme
   2 teaspoons chopped Italian parsley
   1/2 teaspoon grated onion
   Freshly ground white pepper
   4 dill sprigs, or thyme.  Enjoy.
